Help this newbie out (new tires and wheels)

I know I'm beating a dead horse,Hasta , and I've searched the threads, but I find that everyone has a different opinion. I hope you all will forgive me and throw in your 2 cents for my specific situation:

1. I need new tires on my bone stock 01 XJ. The original goodyear wrecklers are on there and they're starting to crack (age, not mileage, has killed these, only 53k miles on the odo right now)
2. I want a lift and 31's but I don't have enough room in my budget.
3. So I need some bad ace tires for a stock lift suitable for towing.
4. I think I can squeeze in some black cragar series 342 "d winows" too.

My question is: What size wheel/tire do I need to
1) give me very minimal or no rubbing
2) give me no overhang
3) give me no underhang (i'd like the tires to line up with the outer edge of the stock fender
4) i like the narrow tires

Right now, I'm leaning towards:
Wheel: Cragar 3425812P Wheel, D Window, Steel, Black, 15 in. x 8 in., 5 x 4.5 in. Bolt Circle, 4.75 in.
