Brinkman smoker cabinets

Okay..

I have one of these cabinets. And I am having heat control issues.

If I fire it with charcol.. I can't get it to heat up to 250F.

If I fire it on straight hardwoods, I can get it to 250F but I can't get the heat to regulate. It will run up and then drop way off.. I have tried adjusting the dampers at the bottom and the smoke vents at the top to what seems like a hundred different positions.

I've moved it from one side of my house to the other to avoid the wind...

Any other ideas? The included instructions were VERY lacking in the operation department...
 
Mix charcoal and wood. Set a good base of coals to set a long slow burning base then add wood on top for the added heat. Then just continue to play around with it till you get the right mix.
 
A lot of smoker pits have thermo's in incorrect places and don't give you an accurate judgement of what the actual temp is inside the cooking chamber. Keep that in mind.
