Anyone know where one might procure deflection info for rectangular steel tubing. Preferably...online.

(mild steel, hot-rolled, 2"x3"x0.125", 12' length)

This is a fairly standard (and simple) structiral engineering calculation. What you need is a book on structural design, either from the AISC (American Institute of Steel Construction) or a smaller substitute such as the "Simplified Engineering" series of books by Harry Parker (McGraw-Hill). I don't think you'll find a chart anywhere -- you'll find a formula from which you can calculate it yourself.

Call your local steel supply. It's possible that they may know if you get the right saleman on the line. Otherwise, ya gotta do what Eagle suggested.
