There are several good trails in the SBNF east of Hemet. You could do Rouse Ridge that takes you from East Hemet to Thomas Mountain, Bee Canyon that take you up to Pine Cove, or you can do Control road that take you to Idyllwild. All of these trails are fairly easy unless you do the Hemet Jeep Club adopt a trail that starts out a little technical than becomes easy. They all have awsome views and gets you out of the heat once you gain in elevation.
Rouse Ridge is a pretty fun go fast road, just make sure it's clear before you go flying.
If you follow bee canyon all the way up, you can take the Hemet Jeep Trail that's maintained by the hemet jeep club. It's a stocker friendly trail, but at the same time you can find stuff to get in trouble on:
