the rule of thumb i've always heard of is 1.5 times the width of the rim. that would make a 10.5" wide tire perfect. some have probably went bigger but i would venture to say that the rule of 1.5 is pretty good. this fits perfect with a 3.5" lift also as a 31x10.5 tire will work pretty well without trimming too much at that height, but it all comes down to how much you value your sheet metal.
you could but a 12.50 on a 7" rim, but that's kinda pushing it. 10.50s are great. also with stock backspacing a 31x10.50 will usually rub the LCA just a little bit.
best tire size depends on how much you want to cut your fenders, but the "right" answer is 31s
