I tried Dirtbound's setup, and I've also tried the Taurus fan swap. Finally what worked was to return the fans to stock, and install a Griffin radiator. Yes, it's expensive (about $545), and it's thicker than any other radiator I've seen for the XJ, but it WORKS! The price is worth the peace...
Bump! I just ordered one of these GenRight tanks. On their website they claim that the capacity is 30.5 gallons. http://www.genright.com/ProductInfo.aspx?productid=GST3003 That's over 10 extra gallons of gas, which to me is worth the price (especially since it includes a very stout skidplate)...

For us 2-door guys, maybe you could have the option of a small cover plate that would fit between the door and the rear wheel well... just so it would look nice and protect that small patch of sheetmetal.
Low speed is 2500 cfm and high is 4500 cfm on the Taurus fan. It will fit with most radiators. I changed to a Griffin rad which is too thick so the Taurus fan won't fit with that one. Am now using Dirtbound Offroad's triple electric fan conversion kit.
