For the diagram that I posted, the high amp relay has to have a normally closed output. You could use an extra relay to open (disable) the low speed circuit when the high speed circuit activates.
Sorry, I'm Pretty Ignorant when it comes to Electronics and Wiring Things Up. I believe the Relays in the Diagrams look as if they are 4 Prong. How would a 5 Prong Relay fit into the Equation?

An FYI, my '98 twin Taurus fans will not activate high speed unless both inputs are powered. That is to say that each hot lead to the fan must be energized in order for the high speed to be reached.
A bench test, with jumpers, should be performed if you are in doubt then adjust your wiring schematic accordingly.
