Watch guys like "Dirt Lifestyle" on Youtube. I think he has a video on tools you need for metal fabrication. Plus, I think he does some pretty cool projects and does a great job filming it all. I learn by watching others.
Tire size? How are you bleeding them when replacing? I used to do the method of on jacks and turn back and forth but now I vacuum bleed it. I take probably longer than I need but upon initial startup there is no noise at all from the pump.
Go with the XJ. Few things:
1. Go with Anti-Rock for sure. It works so well off-road. Much better with it than not.
2. Sound deaden the entire interior.
3. 4.56 with ARB from and Rear. If any thoughts of going to 35s just do it now and put 4.88s.
4. Chromoly axles.

I have the WJ seats in. I don't really have any photos of where I drilled that would help you, but it was pretty easy to put them in and fold them down to see where to drill, where they sit when folded back and so on. It is just trial and error to see what fits best.
I have the mishimoto radiator. Stock pump, stock mopar OEM mechanical fan and aux electric fan. No issues with overheating. Lots of folks run all stock with a Spectra radiator with success.

It is below the front clip behind the bumper. It does get airflow but not as much. No fan yet. I have a temp gauge and 175 is highest I have seen. I monitor it pretty closely and if it becomes and issue I'll be mounting somewhere else and putting a fan on it.

X2 on the Dorman. ALL of them will crack at some point and that is with new quality motor mounts. Dorman has lifetime warranty and when it goes just pull, go to Autozone and have them give you a new one. It is easy to change out.
