Before you panic, you may just have residual oil in the bottom of the tube. Refill your diff. If you see the level drop, or the Exxon Valdez in your driveway you have something to deal with. Otherwise most of it should slowly drip out in the next day or so.
Since this is your first time, do yourself a favor and take some pictures during disassembly. Takes the whole pondering "did I take that spring out first?" out of the equation.
210 is absolutely fine. I have a 97 XJ , 99 XJ and a 98 TJ. They all run at 210 consistently. That is how these engines were designed to run. I have seen all hit 220 with the AC running and ambient temps around 105, and they are fine with it.
