really need to diagnose this issue

jeep temp gauge says its running at about 240* after 3 limps around the block.

specs are as follows: 88 cherokee 4.0L AW4. converted to open cooling system, new t-stat and housing, 3 core radiator, tranny cooler, new water pump, dual electric 10" fans... still cant figure out the cause for the overheating.

please help me diagnose this. give me ideas, anything it could possibly be. i just got the jeep back on the street today, and am going to need it for steady driving in the next couple of weeks.

could it be a head gasket issue? temp sending unit? bad temp gauge? what??
