I'm looking to gut an old cherokee and i would like to know where i go to replace the things like the door, dash molding, gauges, center council... ect.

Yeah just search around the forums and check out the vendors and sponsors of naxja... your best bet for replacement interior is a junkyard but you might want to check out ebay also
 
you may also want to check compatability on electrical things
try gojeep's home page...sorry I don't have a link, but you should be able to find him on here somewhere and there is a link in his sig line.
