The Chevy (GM) 3.4L rear-wheel drive engine from S-10s and Camaros -- or the 3.4L crate engine GM sells specifically to replace the 2.8L in S-10s.
However, the 3.4 will have a zero-balanced flywheel, so the XJ flywheel (flex plate) will require balacing. And the 3.4L has no provision for the mechanical fuel pump so you'll need to buy an external electric pump. If you're going to stay with a carburetor, I may have one out in the garage that will work and I can bring it to Moab -- lemme know if I should initiate a search and recover operation in the outer garage.
