you can read the airbag codes in the obd2 port,. iirc the ground for the airbag pcm is under the center console between the seats, could be a weak ground there, i always d/c the battery for 5 + minutes before messing with any airbag stuff on the jeeps.

i had a problem with that fuse blowing as well once upon a time, jeep would die suddenly and i would find that same fuse blown, this happened several times until i found a pattern that it would blow the fuse at about 3k RPM, after much frustration many searches and trying to lug my jeep around...
if you get heater fan working on high only it is the rheostat if no fan at any speed i would suspect the blower motor, fuse or wiring

shot in the dark, but did you install the battery temp sensor with your swap? iirc the charging system is dependant on battery temp to change voltage to the battery, not sure but may be a spot to start to look into
