    random stalling (electrical?)

    can you check it is spark going off or fuel pump going off when it dies? There is a safety feature for when oil pressure dies or something alike (no RPM readout?) to shut the fuel pump off in case of an accident (IIRC), but more info would be necessary to pinpoint.

    Weird cooling issue.

    how old is your water pump? You may have rusted out the impeller. The lack of flow will keep the coolant in the radiator cool, and the engine will keep all the heat, perfect recipe for a blown head gasket...
