I don't think I could ever wheel something with a roof again. I'm even debating taking the roll bar out to make it more open

Removing the rollbar might be a step too far - I don't know if I'd sign off on a safety check for a Wrangler with no rollbars...

Fair point. If it wasn't originally built with one, I guess I couldn't object.
On the other hand, the YJ came with one originally, so you'd be removing "factory-installed safety equipment" - I'd probably be leery of a stock XJ with the seatbelts removed too...
I did motion for a review of the checklist over in the members forum (figuring that since, if nothing else, it's been quite a while since it's been updated)...
