I will be picking up my 95 Cherokee SE 4x4 with my tow dolley, so just the back tires will be on the road. What do I set the transfer case and transmission in to make it work?

It was suggested to me to put the transfer case in neutral and the transmission in park.
 
The tranny should be in park.

You do not want it to be spinning...even if it is very slow with no oil pressure.

There could be just enough drag on the tcase that it will cause the tailshaft of the tranny to spin.

What someone else said is the best option though, just pull the shaft. If it still has a slip yoke buy you a 1 liter bottle of Mt Dew, drink, and then cut off the bottom of the bottle. It will slip over the output shaft of the tcase to keep the oil from running out.
