Blew out the water pump...Replaced water pump...thermostat and hoses.
Temp will not maintain steady. Sometimes too hot and some times too cold.
Heater blows fine when at at idle but cold when going down the interstate and at times the engine totally overheats. What the heck ?

Year, specs, OEM, MODs... details????

T-stat may be sticking, even new ones. Sounds like the new stat may be bad, but we need the details above.

Is the water pump impeller the correct rotation?

Radiator could be restricted.

Random thought, you didnt get the failsafe thermostat did you? Those will lock wide open when you overheat and that would cause the engine to get hot at idle and cold while driving at freeway speeds.

flush your system, run a water hose into the inlet side with the engine running and let it flow out onto the ground out the outlet hose, that will push out any debris inside your engine restricting flow as well...
