Back country route to the coast

Sounds like Jim Thayer's thing.
As for driving, it's really not doable. Right of the bat from Skyline you either have to go down to Scappoose or North Plains.

There are options further south, Falls City to Lincoln City via Valsetz. Carlton to Tillamook or (I think) Lincoln City via TSF
 
"Taking the roads less traveled"....is always fun.
