Bison Roast, we have used several marinades but my personal favorite is made in NY and called Speedies, hard to find at times.

I usually serve with rice on the side with maybe some broccoli. Nice quik clean up as well.

Horribly unhealthy but oh-so-delicious dutch oven cobbler:

One box of Jiffy Cake Mix
Two cans of your fruit of choice
Second box of Jiffy Cake Mix
Spread 1-2 squeeze bottles of butter over top. I usually try and make it 1 unless I'm caught.

On the backpacking side of things I try and stay away from the meal-in-a-bag crap.

Rice/nuts/beans are great with almost any spicing you desire.
Dry soup mixes are great for pasta dishes such stroganoff and tetrazini.
As far as meat goes, you can get chicken in a bag, or dehydrate your own stuff (takes some practice to get right). There's nothing like having beef 3 days into a hike though.
