Replacing Ingition Switch w/ Switch Panel

I would like to replace the ignition switch with a panel similar to this:

Need some help on the wiring and some advice on how to wire it up. (which wires are for each item (hot and switched) and what interior accesoriy wires can be grouped on the same switch)

Basically, I keep dealing with burning up the harness and thin gauge wires and want a real "fix" I will probably put a relay on the fan switch
