how to tell axle ratio without wrenching?

Jack the rear up, and turn the pinion. Truck has to be in neutral.

Turn the pinion and mark one of the tires, how ever many times the pinion turns to one full revolution of the tire. (3.5 pinion turns to one tire, is 3.55 ration)
 
Both tags gone? or 20 minutes a tube of silicone and a drain bucket

It's likely either a 3.73 or a 4.10 depending on if it is a manual, automatic, or it's been fudged with it could be anything.

If the tags are gone, it could already be fudged with :(

No, you'd have to count the teeth on the ring and pinion and do some math.

The fastest, cleanest, easiest way is how KarlVP described above.

The ring gear should have some numbers on it. But usually for a stock gearset you would have to do some math. The number of ring gear and pinion teeth are stamped on it somewhere. You divide the two and that will give you your ratio.
