1988 Cherokee Laredo stalls at high speeds, high RPM

I've done a search, but only came close to my problem.
My Jeep runs very smooth at idle and just driving around. The problem arose when I was doing the speed limit ( or so....), then gunned it to pass. It began to sputter, and when I pulled over, it died if I didn't press the throttle and release as the RPM's rose again. I drove like that on side roads, but eventually deemed it unsafe to travel with my Jeep lurching the whole way. I was then able to park it for a few hours, start it, then drive it home at a low speed, with better results. It did sputter a few times then as well.
This jeep has been parked for months, but I started it every few weeks.
I tested the MAP, TPS, and O2 sensor, replaced plugs , wires, fuel filter, and exhaust (beyond the manifold) when I first bought it.
I have the fuel pump out (to check for tank debris). It there a way to test it out of the tank before I put it back in?
Any guidance will be greatly appreciated.
