I have just replaced the CPS and am wondering what other sensors I should carry to make sure that I am not stranded somewhere.

I think the cps is the main one that leaves you dead in the water.Other sensors like map,iat and o2 will limp home....albeit very roughly.Not too sure if the tps will completely disable you though.....
tps could completely shut it off, if it shorts completely.
CPS is mandatory, TPS is a good thing, all the others are something you can drive without, or fail so seldomly chances are very low(MAP).
You might want to carry a spare headlamp switch as well, they're cheap($8) and if it fails at night you're hosed.
