Can I just pull the Limited slip stuff and install a mini spool, or do I need an open carrier?

I think you'll need a new carrier.

The LS carrier is sized for extry shtuff like clutches.
You'll need an open carrier.
Might as well get a full spool if you're going spend money on the mini and an open diff.
