Gutting a rig for V8 swap, what to leave?

I have an 88 MJ truggy, that I'm planning to gut completely and do a gen1 350 swap with a 700R4 and Dana 300. Been crunching numbers, and this is the simplest & most cost effective way to go... Run the 350 on propane. Done. I thought about the Vortec route, but I'm not up for the whole wiring nightmare. So propane it is....

My question is:
When I go about gutting this rig, I want to remove as much old wiring as I can. This is an offroad only buggy, no speedo.. The only electronics I'll have is aftermarket taillights, aftermarket offroad lights & a temp gauge. No speedo, no dash stuff, no nonsense here.

So... What all do I need to keep as far as wiring?
Gonna run a Gen1 Chevy 350 on propane, 700R4 & Stak Dana 300 case.
