When I went looking for a new yoke to replace on my 8.25, I wanted a u-bolt style yoke as well. Unfortunately, I never came across one, and don't believe anyone makes them.
I have a flat flange from a Dodge on mine. I am not sure of the application but you need the flat flange and an adapter for the driveshaft. It's pure beef and I never worry about a u-joint getting loose and causing a failure.
I looked for a U-bolt style yoke as well but ran across these little titanium gems for the stock yoke. For the life of me I can't remember who I got them from but I'm sure they were in Cali and sure someone will post a link.
