If you remove the carrier, you also need to remove the inner axle shafts. The stub shafts (outer part past the u-joint) must remain in the hubs for this to work. You should also probably remove your front driveshaft so that in no way at all will your front pinion rotate.
*If you don't leave the stub shafts in the hubs, the hubs will separate somewhere inconvenient, like the highway doing 65.*
If you are simply driving down the block at some slow speed and don't much care for your inner seals, then, yes, you can drive your Jeep a short ways with the carrier removed.
