But If I have aftermarket adjustable LCA's, can I ditch one of the UCA's and make a short arem three-link? How would this effect handling and stuff like that?
 
It has been done, and I drove a 3 link on short arms with factory uppers for like 30 miles till I got my T&T's installed.

I don't see why you can't, I just wouldn't. Unless you carry a spare upper, if you break one on the trail your up shit creek...

Its not going to gain you anything, except replacing more bushings and possibly bent arms... Why? is my answer.
