How to measure lift.

My first XJ. 1998. It came with a small lift and had 31,s that cleared. Now I added JKS adjustable coil spacers and a 8.8 rear end with 4.88,s that sits on taller pearches. The factory fender flares are gone but the metal has not been trimed. Is there a way to determine how much lift I have? I want to keep it as low as posible and run 35's. I will cut fenders but I want to measure first. Is there a point at which tires will just not tuck into the wheel well and you must go tall? I could live with 34's but would like big tires with little lift. Any body seen a 35X10.50 radials besides SSR Swamper? 15.16.or17 inch rim as I will buy wheels and tires when I get the height set. Any and all advise or tips appreciated.
 
I think stock is something around 17 inches from fender to middle of the hub
