I have seen the schematics to make a variable MAP sensor on Dino's page, my question, will this same mod work with the Renix system?

Ever since I put the Crane 753901 cam in my stock Renix, under WOT the car doesn't actually seem to pull as hard as it does under less pedal pressure. I'm gonna borrow a friends wideband O2 sensor to see whats going on, but now I wonder if you can put it after the cat to get a proper reading.

The wideband is a must-have to diagnose that condition. You need to weld a bung into your exhaust collector, you're going to get funky readings post cat.
If the car is not going into open loop mode, that could cause your condition. Open loop o2 readings should be about 12.5-13.5 to 1.

In the chance I am unable to use a WB O2 gauge, how can I diagnose if my current O2 sensor is functioning correctly?
