I want to put gears in my xj, but dont want to rev too high on the freeway. I also don't want to get a big decrease in gas mialage. I will be running 32x11.50

I would say 4:56 but go at least 4:10

Gearing too high will hurt you more than gearing low. 4.56 is pretty close to factory on 32's. With 32x11.5's and 4.56's i was getting about 18 mpg and cruising comfortable at 75.
