Lately when shifting I've noticed a bang or a clunk that sounds like it's coming from the rear driveshaft, or atleast that area, somebody told me it's a U-Joint going, this seem right? I've got load-leveling springs that raise the rear of the XJ up about 3 inches so could this be causing it?

yup sounds like u-joints and having a lift in the rear speads up the process of wearing out u-joints. grap on either side of the u-joint and try to twist in opposite directions if there is any movement they are bad.
