What temp rating should I look for in a winter thermostat? My `92 4.0 ran all summer at ~180°-190°

The factory thermostat is 195 degrees. Run that all year.

good advice, I will ask the mechanic to check that. I have to take it in for muffler bearings, it makes this "revving" sound when I push on the gas pedal.

Seriously though, you want the truck to run the same temp all year. The lower temp thermostat might slow it from heating up, but it will still be fine. I lived in NE PA for a while and had a 180 in my S-10, took a while for the heat to get nice an toasty, but never had a problem and it ran great...
