Aluminum corrodes, although in California that's probably not much of a concern.
Aluminum also undergoes continuous slow deformation (creep) under load/pressure. If you run aluminum blocks or shims, you should train yourself to check the torque on the axle u-bolts religiously.
Mopar Performance Catalog offers angle shims. Doesn't say if they are steel or aluminum. Part No, P4529536. Kit includes two each in 1-degree, 2-degree and 3-degree.
RRO makes awesome blocks.
They will stack them in 1/2" increments and weld them together. They will weld a shim to the bottom as well.
Costly, to be sure, but they are steel and beefy.
If I used blocks, these would be the only ones I would buy.
