I think you're thinking about Survivorman, where the guy was in Canyonlands.

it was a good show, I tought some wilderness survival when I was a camp counselor. That was very informative, though I can't say I'd recommend most people climbing a chimney.
Bird eggs are always good.
snakes are tasty
bugs aren't so bad
I'm always looking for roots to eat though, not a big fan of bugs.

Good show on "I Shouldn't Be Alive" tonite also. Two brothers in trouble hiking in southern Utah. All three shows were good.
